So there's got to be something in the lack of quality of the yeast and imported flour I have. The texture (delicately crispy and creamy) is there but the flavor is not. It just tastes like bread soaked in oil. And not very good bread ( flavor wise). I'm not sure what it's missing but the flavor is still off. Maybe a better quality of oil but I think this is yeast related.

Fausto...an I correct in thinking the malt us Diastatic malt powder? What about the 00 flour? What protein/gluten content?

Okay, thanks man. I actually thought of honey. I normally use honey in bread doughs.

the activator is used to "activate" the yeast. If you don't find it, you can use a little spoon of honey!
